Sourced from the Drake Estate, the base wine is a 50:50 blend of Pinot Noir and Chardonnay. Hints of cherry, strawberry, and tangerine jump from the glass in our second ever offering of sparkling rose. Hints of stone fruit and flowers add a delightfully effusive note. Made in the traditional method, the wine spent 4 1/2 years en tirage with a small amount of red wine added during this secondary fermentation. The wine has terrific vibrancy and minerality with flavors of cherry and citrus. The mousse is very fine and can only be achieved with traditional method and longer aging on the yeast. At 4.25 g/L dosage, it is considered very dry with just enough sweetness to balance the palate.
