This wine was cold fermented in large (approx. 350-liter) concrete egg-shaped fermenters imported from France. It is again fermented dry with no malo-lactic but captures the austereness that would best define the heavily limestone soil in this block at Vista Verde. I really enjoy the richness to the mouthfeel that sur-lie ageing provides. The aroma of wet stone in the nose is complemented flavors of ripe melons, ruby red grapefruit, green tea and mineral. Because of the mouth-watering acidity, there is a lemon drop flavor to the finish. A wonderful wine for sipping or enjoying with fresh seafood!
