You hear a lot of talk in the wine business about handcrafted wines.  At Williams Selyem, handcrafted isn't just a word we throw around because we think it will sound good in the brochure or on the web site. When we say that Williams Selyem wines are handcrafted, we mean it. Our commitment to handcrafted wines is one of the things that makes Williams Selyem wines unique.

Handcrafting means having enough people to work on the schedule that the grapes demand, rather than having the grapes fit into our schedule. Once they are off the vine, grapes like to be cool. Keeping them cool retains the bright, ripe flavors that make for the most flavorful wine. We make sure we always do what's right for the grapes, even if that means we have to be at the winery at five o'clock in the morning.

Handcrafting means minimal interference so, from fermentation to bottling, the methods we use do not include pumping, filtering or other processes that would compromise the quality of the wine. We know it takes more time to make wine this way, but we also know wine doesn't like to be rushed.

Handcrafting means paying attention to each one of the thousand steps that go into making the exceptional wines that Williams Selyem is famous for.

Handcrafting means letting quality be our guide.  There is no pressure to take short cuts, and we don't hurry the grapes or wine along because it does not meet our schedule. Through each step of the process we let the wine tell us when it is ready for the next step. Ready to go into the barrel, ready to come out of the barrel, ready to go into the bottle and ready to be released.
